Monster Cookie Protein Bark

Everyone loves a good monster cookie because they are sweet and salty. This monster cookie protein bark is perfect for the person who loves a monster cookie but is also looking for something with added nutrients. I used PB Fit as my protein powder in this recipe, but you can use any protein powder of your choice. I love anything that taste like dessert but can be called a snack, and this bark is perfect for just that!

Monster Cookie Protein Bark

Ingredients

  • 1/2 Cup of PB Fit Powder

  • 1/2 Cup of Gluten Free Rolled Oats

  • 1/3 Cup of Coconut Oil, melted

  • 1/2 Cup of Honey

  • 1/3 C of Peanuts

  • 1/3 C of M&M’s

  • 1/2 Cup of Chocolate Chips

  • 1 Tbsp of Coconut Oil

  • Sea Salt

Directions

  1. In a mixing bowl, add the PB fit powder, gluten free rolled oats, coconut oil and honey. Mix together until your cookie dough forms. Fold in peanuts and M&M’s. Spread batter onto parchment.

  2. Add the chocolate chips and coconut oil to a microwave safe bowl. Heat for 1 minute and stir together. Pour melted white chocolate over the cookie dough batter. Top with sea salt. Place pan in the freezer.

  3. Let it harden, break it and enjoy!
