Bakery Style Banana Walnut Muffins

I love a good jumbo muffin that you find at a coffee shop. However, I do not like that most of them are filled with sugar and not good ingredients. Jumbo muffins are fun because they take very little batter and who does not love a big muffin! These Banana Walnut Muffins are absolutely delicious. They are moist, made with simple ingredients and only sweetened with banana and agave. They are gluten and dairy free, plus they actually taste good. I hope you enjoy them as much as we did on a random Tuesday morning!

Ingredients

  • 1 C of Almond Flour

  • 1/4 C of Tapioca Flour

  • 1 tsp of Baking Powder

  • 1 Banana

  • 1 Egg

  • 1/2 C of Almond Milk

  • 2 Tbsps. of Agave

  • 2 Tbsps. of Hemp Seeds

  • 1 tsp of Cinnamon

  • 1/2 C of Walnuts

Directions

  1. Pre heat your oven to 350 degrees. Line a jumbo cupcake pan with cupcake liners or parchment paper.

  2. In a mixing bowl, add the banana and egg. Whisk until combined. Then add the almond flour, tapioca flour, baking powder and cinnamon. Whisk it together. Then add the almond milk, agave, hemp seeds and walnuts, and stir until combined.

  3. Pour into the cupcake liners and place in the oven. Bake for 30-35 minutes (see notes). Enjoy!
