Blueberry & Banana Muffins

These gluten and dairy free blueberry and banana muffins are the perfect breakfast treat, or even afternoon snack. They are light and fluffy, and bursting with flavor! Plus, they are made with wholesome ingredients and are perfect for anyone to enjoy!

When Brady decides he is craving something, he will often times ask me to make it. So when he said he wanted blueberry and banana muffins, my mind went to work. I always try to make his treats extra healthy, and this is one batch he loved. These muffins are made with Bobs Red Mill Gluten Free Flour, Almond Flour, Eggs, Bananas, Blueberries, Agave, Organic Cane Sugar, Vanilla Extract, Baking Powder, and Water. They are the perfect treat to have around the house!

Gluten Free Blueberry & Banana Muffin Ingredients

  • Bobs Red Mill Gluten Free Flour
  • Almond Flour
  • Baking Powder
  • Cane Sugar
  • Bananas
  • Eggs
  • Vanilla Extract
  • Water
  • Agave
  • Blueberries

How to make these Blueberry & Banana Muffins

  1. Preheat your oven to 350 degrees.
  2. Line a muffin pan with cupcake liners.
  3. In a microwave safe bowl, heat the bananas for 1 minute and mash. Add the eggs and stir together.
  4. In a mixing bowl, add all other ingredients, except the blueberries. Stir in the banana and egg mixture, and mix thoroughly.
  5. Add in the blueberries.
  6. Pour the batter evenly throughout the muffin pan.
  7. Place in the oven and bake for about 15 minutes.
  8. Enjoy!

  • Can you use other sugars to sweeten the mix?
    • Absolutely! You can use any kind of sugar to sweeten the muffins. Remember, some sweeteners may need to be adjusted based on level of sweetness it provides. Also, if you decide to use honey or maple syrup, this can make the batter a bit more runny. You will need to adjust the flour amount!
  • Can you use a different flour for the muffins
    • Yes, you can substitute either of the flours for another flour if you would like. Doing this could alter the way the batter comes out and how it bakes, so you may have to adjust the amount of liquid depending on the type of flour. For example, coconut flour absorbs more water and will need more liquid than almond flour does.
  • Can you add other ingredients like nuts to the batter?
    • Yes you can! You can add anything like walnuts, almonds, coconut, and more! I challenge you to get creative. I topped one of mine with a lemon honey and lemon blueberry granola!
