Cashew Joy Cookies

What exactly are Cashew Joy Cookies? Very similar to an Almond Joy, only these are made with cashews and they are joyful cookies instead of a candy bar. Just as delicious, but much better for you as these cookies have lots of nutrients in them.

These grain free, gluten free, and paleo friendly cookies won’t stay in the cookie jar for long because you will not want to stop eating them once you make them. Fill with wholesome ingredients like Gluten Free Rolled Oats, and healthy fats like Cashew Butter, they make the perfect snack or dessert.

How to make these grain free Cashew Joy Cookies

  1. Preheat your oven to 350 degrees
  2. Line a cookie sheet with parchment paper or baking mats
  3. In your food processor or stand mixer, blend together the almond flour, rolled oats, cane sugar, baking powder, egg, almond extract, and cashew butter. Mix together until it is all incorporated.
  4. Stir in the shredded coconut and unsweetened chocolate chunks.
  5. Roll your dough into cookie dough balls and place about on the baking sheet. With a fork, press down the cookie just a little so they flatten a bit. (Note: these cookies will not spread as much as they will rise, which is why they come out so thick and chewy!)
  6. Place in the oven and bake at 350 degrees for about 15 minutes or until cooked all the way through!
  7. Enjoy warm so the chocolate is melted a bit!

Tips on making the best grain free cookies

  • Can you use Coconut Flour in place of Almond Flour?
    • Yes, you can replace the almond flour with coconut flour. Remember though, coconut flour does absorb much more liquid then almond flour does. If you decide to switch out the flours, be sure to add more almond milk to the batter until the consistency is just right. This could alter the cooking time as well.
  • Can you make this recipe vegan?
    • Absolutely! This recipe can easily be made vegan by replacing the egg with an egg replacement substitute. Bobs Red Mill has a great egg replacement that is easy to use. You can also do a Flax seed Egg, which is just milled flax seed and water together!
  • Can you use a different type of sugar?
    • Yes! There are many different types of sugars that you can use. Some sugars may be sweeter than others, which may cause you to need to adjust the amount you put into your banana bread mix!
