Chocolate Cake Cookies

These chocolate cake cookies are soft and tasty. They are gluten free, grain free, dairy free, and paleo friendly. It is safe to say that in this case, you can have your cake and eat it too because these cookies are filled with nutrients, plus they even have collagen in them.

I love cookies, in fact, I would eat cookies over cake. But I also love cake. So when these cookies came out of the oven, and I took my first bite, I knew I had fallen in love. These cookies are made with Almond Flour, Cocoa Powder, Organic Coconut Sugar, Ancient Nutrition Chocolate Collagen, Almond Extract, an Egg, Avocado Oil and Baking Powder. They are so simple and yet, so tasty! The added collagen makes these cookies extra fluffy. What is even better though, is collagen brings so many health benefits within this batch of cookies. So in reality, you are eating good food your body loves and needs!

Chocolate Cake Cookie Ingredients

  • Almond Flour
  • Cocoa Powder
  • Organic Coconut Sugar
  • Ancient Nutrition Chocolate Collagen
  • Almond Extract
  • Avocado Oil
  • Egg
  • Baking Powder

How to make chocolate cake cookies

  1. Preheat your oven to 350 degrees.
  2. Line a baking pan with parchment paper.
  3. In a mixing bowl, mix together Almond Flour, Coconut Sugar, Baking Powder, the egg, Chocolate Collagen, and Avocado Oil. Blend until a cookie dough batter forms.
  4. Roll dough into cookie dough balls and press down. Sprinkle with your choice of sprinkles. Place in the oven and bake for about 15 minutes.
  5. Enjoy warm, or frozen because they freeze really well!

Tips on how to make these cookies the best

  • Can you use a different flour?
    • Yes you can substitute out the almond flour for another flour of choice. Just remember, when using other types if flours, you may have to adjust the liquid because some flours absorb more liquids.
  • Can you use a different sugar?
    • Yes! You can use any type of sugar you would like for these cookies!
  • What if you don’t have chocolate collagen?
    • It is okay if you do not have chocolate collagen or even the specific kind that I have. You can always add in vanilla or regular collagen, just adjust the cocoa powder from 2 Tbsps to 1/4 of a cup!

  • 1 1/2 Cup Almond Flour
  • 2 Scoops Chocolate Collagen I used Ancient Nutrition
  • 1 tsp Baking Powder
  • 1/2 Cup Avocado Oil
  • 2 Tbsps Cocoa Powder
  • 1 Egg
  • 1 tsp Almond Extract
  • Sprinkles Optional

Instructions

  • Preheat your oven to 350 degrees.
  • Line a baking pan with parchment paper.
  • In a mixing bowl, add in all of your ingredients and mix until a cookie dough batter forms.
  • Roll into cookie dough balls and flatten just a bit. Add your sprinkles.
  • Place in the oven and bake for 15 minutes, or until finished.
  • Enjoy!
