Fruity Banana Bread

This grain free banana bread has a fruity twist to it that is absolutely delicious. With an added crunch of grain free granola and sweet flavors of dried fruits, your next bite of banana bread will never be the same!

This grain free fruity banana bread was inspired by those lovely fruit cakes you find during the holidays. I decided to add the taste of fruit flavors through dried fruit to this banana bread. Plus, by adding in the almond extract, it gives the bread a pound cake like flavor. It is out of this world!

How to make Grain Free Fruity Banana Bread

  1. Preheat your oven to 350 degrees and coat your bread loaf pan with cooking spray or coconut oil.
  2. In your food processor or stand mixer, add in the banana’s, egg, water, and sugar. Mix until it is all incorporated.
  3. Add in the almond flour, baking powder, cinnamon, and both vanilla and almond extract.
  4. Stir in the granola and dried mulberry or raisin’s.
  5. Pour into a bread loaf pan and place in your oven. Bake for 45 minutes or until it is cooked all the way through.
  6. Slice and enjoy!

Tips on making the best grain free banana bread

  • Can you use Coconut Flour in place of Almond Flour?
    • Yes, you can replace the almond flour with coconut flour. Remember though, coconut flour does absorb much more liquid then almond flour does. If you decide to switch out the flours, be sure to add more almond milk to the batter until the consistency is just right. This could alter the cooking time as well.
  • Can you make this recipe vegan?
    • Absolutely! This recipe can easily be made vegan by replacing the egg with an egg replacement substitute. Bobs Red Mill has a great egg replacement that is easy to use. You can also do a Flax seed Egg, which is just milled flax seed and water together!
  • Can you use a different type of sugar?
    • Yes! There are many different types of sugars that you can use. Some sugars may be sweeter than others, which may cause you to need to adjust the amount you put into your banana bread mix!

The best part about making this amazing banana bread is the smell it has while its cooking and of course, the moment you get to slice it. I suggest you slice it up and eat the bread warm! For some reason, eating the bread warm brings out so much flavor in the bread. Also, this bread freezes well!
