Grain Free Peanut Butter Cookie Brownies

Two of the best combinations is chocolate and peanut butter. They go together like peanut butter and jelly do. When you add peanut butter to a brownie, its delicious, so why not add grain free peanut butter cookie dough to a grain free brownie? And then you add chocolate collagen and you now have an extra healthy dessert that is super tasty!

When my aunt brought over her dessert for Easter, it happened to be a brownie and peanut butter mixed together. I fell in love with them and decided to go home and recreate them, but in a healthier way. I pulled out Almond Flour, Cocoa Powder, Peanut Butter, Organic Cane Sugar, and Eggs, and I started going to town! This creation only needs two mixing bowls, and list of nutritious ingredients, and an oven, and before you know it, you will have the tastiest treat at your fingertips.

Grain Free Peanut Butter Cookie Brownie Ingredients

For the brownie…

For the peanut butter cookie…

  • Almond Flour
  • Organic Cane Sugar
  • Creamy Peanut Butter
  • Egg
  • Vanilla Extract
  • Baking Powder
  • Water

For toppings… I suggest chocolate chips and sea salt! I used Pascha Chocolate!

How to make grain free Peanut Butter Cookie Brownies

  1. Preheat your oven to 350 degrees and spray an 8 x 8 brownie pan.
  2. In your first mixing bowl, add all of your ingredients in for the brownies and mix well. Pour into your baking dish.
  3. In your second mixing bowl, add all of your ingredients in for the peanut butter cookie and mix well until a cookie dough batter forms. Pour this batter over the brownie mixture and use a knife to swirl around.
  4. Place in the oven for 20 minutes, and pull out to top with your chocolate chips and sea salt. Place back in the oven for another 10 minutes or until everything is cooked all the way through.
  5. Enjoy warm because we all need a bite with melted chocolate and peanut butter.

  • Can you use other sugars to sweeten the cookies and chocolate?
    • Absolutely! You can use any kind of sugar to sweeten the brownies and cookies. Remember, some sweeteners may need to be adjusted based on level of sweetness it provides. Also, if you decide to use honey or maple syrup, this can make the batters a bit more runny. You will need to adjust the flour amount!
  • Can you use a different flour for the brownies and cookies?
    • Yes you substitute almond flour for another flour if you would like. Doing this could alter the way the batter comes out, so you may have to adjust the amount of coconut oil depending on the type of flour. For example, coconut flour absorbs more water and will need more liquid than almond flour does.
  • Can you use something other than peanut butter?
    • Yes you can! You can use any nut butter if you would like to make it exactly how you want. You can substitute peanut butter for almond butter, cashew butter, and even sunflower butter. Really, any nut butter you enjoy in a cookie would work perfectly!
  • Can you use something in replacement for the collagen?
    • Absolutely! You actually don’t need to add any collagen if you don’t want or don’t have any. I added this for extra flavor and extra nutrients! If you have regular collagen, you can add that, or maybe your favorite protein power. You could also add a little extra cocoa powder instead!

  • 1 Egg
  • 1 Cup Almond Flour
  • 1 tsp Baking Powder
  • 1/4 Cup Cocoa Powder
  • 1/2 Tbsps Water
  • 1/4 Cup Cane Sugar
  • 1 tsp Vanilla Extract
  • 1 Scoop Ancient Nutrition Chocolate Collagen

For the Peanut Butter Cookie

  • 1 Egg
  • 1 Cup Almond Flour
  • 1 tsp Baking Powder
  • 1/4 Cup Cane Sugar
  • 2 Tbsps Water
  • 1 tsp Vanilla Extract
  • 1/4 Cup Peanut Butter, Creamy
  • 1/4 Cup Chocolate Chips
  • 1 tsp Sea Salt

Instructions

  • Preheat the oven to 350 degrees and spray an 8×8 brownie pan.
  • In your first mixing bowl, add all of the ingredients for the brownie mixture and blend well. Pour into your brownie pan.
  • In your second mixing bowl, add all of the ingredients for the peanut butter cookie and stir until a cookie dough batter forms. It will be a little more runny than regular cookie dough, but you want this texture so it is easy to spread on top of the brownie. Once it is mixed well, pour over the brownie batter and use a knife to swirl it around.
  • Bake for about 20 minutes and then pull out of the oven. Top with your chocolate chips and sea salt, then place back in the oven for another 10 minutes.
  • Enjoy warm because everyone needs a bite with melted chocolate and peanut butter.
