Lemon Blue-Cranberry Oat Cookies

Something refreshing and oh so sweet is exactly what these cookies bring when you take that first bite. They are great for a snack, maybe a breakfast treat or that after dinner sweet. Filled with whole grain rolled oats, healthy fats, and more, they are the perfect cookie to have laying around the house.

Ingredients for Lemon Cran-Blueberry Oat Cookies

  • Rolled Oats
  • Almond Flour
  • Organic Cane Sugar
  • Baking Soda
  • Baking Powder
  • Almond Extract
  • Lemon Extract
  • Egg
  • Applesauce
  • Cranberries
  • Blueberries
  • WholeMe Granola Clusters

How to make Lemon Blue-Cranberry Oat Cookies

  1. Preheat your oven to 350.
  2. Mix all of your ingredients together for the cookie until your dough forms.
  3. Roll into small or larger cookies and place on your baking sheet.
  4. Bake for about 15 minutes or until golden brown! Enjoy!

Tips & Tricks to making the best cookies

  • Even though these cookies call for almond flour, you can substitute for your favorite flour. Just remember that some flours will need more liquid than other flours will.
  • You can use any sugar you would like. I often use coconut sugar as well, but I do love using cane sugar, which is why this recipe calls for that.
  • You do not have to use WholeMe Clusters, you can actually use any granola you would prefer.
