Ooey Gooey Pecan Pie Bars

You read that correctly! Pecan Pie bars that are gluten free, dairy free, and paleo friendly. I don’t think you will find this around the Thanksgiving table, but with these bars, times could change!

When looking in the pantry and deciding what to make, I always look at the random ingredients that I have on hand. First thing I saw was Pecan Butter, and the second thing I saw was Date syrup. So of course, pecan pie bars come to mind because what else would! These bars are made with Coconut Flour, Almond Flour, Coconut Oil, Coconut Sugar, Date Syrup, Almond Milk, Vanilla Extract, Coconut Oil, and an Orange Bourbon Infused Honey. An arrangement of flavors that brings out such a unique and delicious flavor!

Pecan Pie Bar Ingredients

  • Coconut Flour
  • Almond Flour
  • Coconut Oil
  • Water
  • Coconut Sugar
  • Date Syrup
  • Pecan Butter
  • Coconut Oil
  • Orange Bourbon Honey (can use regular honey)
  • Almond Milk
  • Vanilla Extract
  • Pecans

How to make Pecan Pie Bars

  1. You will start by making the short bread crust. Mix together the coconut flour, almond flour, coconut oil, water, and coconut sugar until a dough like batter forms.
  2. In an 8×8 baking pan lined with aluminum foil, press the shortbread crust into the pan and bake at 350 for 10 minutes.
  3. In the same mixing bowl, blend together the date syrup, coconut oil, orange bourbon honey, almond flour, almond milk, and vanilla extract. Pour on top of the crust.
  4. Sprinkle crushed pecans all over the top to cover the dish.
  5. Freeze until it hardens enough to cut into squares. **These bars are ooey and gooey, but they will make your taste buds go wild!

Tips on how to make these bars the best

  • What if I do not have date syrup?
    • If you do not have date syrup, do not worry! You can always puree your own dates, or you can use maple syrup in replacement for the date syrup.
  • Do you have to use coconut flour and almond flour?
    • No you do not! You may substitute any flour of your choice. I like to use coconut flour for the shortbread crust because it makes it taste just like shortbread.
