Pumpkin Coconut Cookies

All things pumpkin spice the minute September hits. What better way to start the fall season then with a cookie that screams fall but has a hint of summer flavors with it too. These pumpkin coconut cookies are super easy to make, they are vegan friendly, and they are very tasty!

Ingredients for the Pumpkin Coconut Cookies

  • Almond Flour
  • Rolled Oats
  • Unsweetened Coconut Flakes
  • Avocado Oil
  • Organic Cane Sugar
  • Baking Powder
  • Pumpkin Puree
  • Pumpkin Pie Spice

How to make Pumpkin Coconut Cookies

  1. Preheat your oven to 350 degrees.
  2. Line a baking pan with parchment paper.
  3. Mix all of your ingredients together in a mixing bowl.
  4. Roll cookie dough into thick dough balls and place on the parchment paper. Flatten just a bit.
  5. Bake for 15 minutes or until golden brown on the bottom.
