They are super easy to make, plus they are made with pancake mix. Who doesn’t love a good pancake but in a muffin form?

Ingredients to make some Pumpkin Maple Banana Pancake Muffins
- Birch Benders Paleo Pumpkin Spice Pancake Mix
- Organic Cane Sugar
- Ripe Bananas
- Pumpkin Puree
- Pumpkin Pie Nutpods Creamer
- Baking Powder
- Maple Extract
- An Egg
- Pumpkin Pie Spice
- Brown Sugar
- Vegan Butter
How to make Pumpkin Maple Banana Pancake Muffins
- Preheat your oven to 350 degrees.
- Line a muffin tin with cupcake liners.
- In a mixing bowl, combine all of the ingredients for the muffin mixture and stir until mixed thoroughly.
- Pour batter into muffin pan.
- In the mixing bowl, add together the brown sugar, butter and pumpkin pie spice. With your fingers, mix it and then crumble on top of the muffins.
- Bake at 350 for about 15 minutes or until cooked all the way through.
- Enjoy!

Tips and Tricks!
- If you do not have birch benders paleo pumpkin pancake mix, you can definitely use regular pancake mix or any pancake mix you have! Just be sure to add in extra pumpkin spice.
- Any milk will work for the nutpods pumpkin spice creamer! This is fun to use because it does give an extra pumpkin flavor along with lots of creaminess. But any milk of choice will work!
- You can make these vegan but substituting a flax egg for the regular egg!

Ingredients
- 1 Cup Birch Benders Paleo Pancake Mix
- 2 Bananas Ripe
- 2 tsps Baking Powder
- 1 Egg
- 1/4 Cup Cane Sugar
- 1/4 Cup Pumpkin Puree
- 2 Tbsps Nutpods Pumpkin Spice Creamer You can use any milk if you do not have nutpods
- 1 tsp Pumpkin Pie Spice
- 1 tsp Maple Extract
For the Brown Sugar Coating
- 1/4 Cup Brown Sugar
- 1 Tbsp Vegan Butter Softened
- 1 tsp Pumpkin Spice
