Pumpkin Spice Blondie Bites

Think of a brownie with chocolate chips and oreos, but now imagine a pumpkin spice blondie with those ingredients. Is your mouth watering yet? These pumpkin spice blondie bites are oh so good. Pumpkin and chocolate are a perfect pairing together, and with every bite, you are getting a little bit of pumpkin and a little bit of chocolate goodness. The perfect fall treat, one that will not last in your house.

Ingredients for Pumpkin Spice Blondie Bites

  • Almond Flour
  • Pumpkin Puree
  • Organic Cane Sugar
  • Baking Powder
  • An Egg
  • Picnik Creamer or other milk subsitute
  • Avocado Oil
  • Pumpkin Pie Spice
  • Chocolate Chips
  • Oreos, Goodie Girls for gluten and dairy free

How to make Pumpkin Spice Blondie Bites

  1. Preheat your oven to 350 degrees and grease an 8×8 baking dish.
  2. In a large mixing bowl, add in all of the ingredients for the brownies. Stir together until it is mixed thoroughly.
  3. Fold in the chocolate chips and oreos.
  4. Pour batter into a greased 8×8 baking pan and sprinkle with more crushed oreos.
  5. Bake for about 25-30 minutes or until cooked all the way through.
  6. Cut and enjoy!

Tips & Tricks to making these the best!

  • Do you have to use almond flour? I have not tested these with any other flour but almond flour. Although, I am sure if you wanted to use a different flour, it would work. Just keep in mind, some flours absorb more water than others and it may need more liquid.
  • Can you use any type of sugar? Yes! I love to use a variety of sugars. I have found organic cane sugar to be the best tasting, and adds the most sweetness. This does allow me to put less sugar in a batter. But you can switch out the cane sugar for whatever else you are looking for!
  • Can you use regular oreos? Yes! If you do not care for these to be completely gluten and dairy free, feel free to use regular oreos!
