Strawberry Coconut Cookies

These strawberry coconut cookies are grain free, gluten free, dairy free, and paleo friendly. The best part is they can be enjoyed for breakfast, as a snack, or even dessert. Who doesn’t want a cookie that you can eat at anytime of the day! Plus, these cookies are made with protein powder to give some extra added nutrients!

When Arbonne came out with strawberry protein powder, I knew I wanted to make something fun with it, something that was refreshing sounding. That is how these strawberry coconut cookies were born. Not only are they made with vegan friendly protein, but they have Almond Flour, Rolled Oats, Coconut, Eggs, Vanilla Extract, Coconut Sugar, and a Salted Dark Chocolate topping to make your taste-buds go wild! These won’t last long in the kitchen though because they be enjoyed truly at any point during the day.

How to make these strawberry coconut cookies

  1. Preheat your oven to 350 degrees and line a baking pan with parchment paper.
  2. In a mixing bowl, add your almond flour, rolled oats, coconut sugar, vanilla protein powder, baking powder, coconut, eggs, vanilla extract, strawberries and water. Mix it all together until a cookie dough batter forms.
  3. Roll cookie dough into balls and place on your baking pan. Press cookies down to form that perfect cookie shape.
  4. Place the cookies in the oven and bake for about 15-18 minutes, or until golden brown.
  5. Remove from the oven and top your cookies with a HuKitchen Chocolate Square and place back in the oven for 1 minute.
  6. Enjoy warm while the chocolate is still melted!

Tips on how to make these cookies the best they can!

  • Can you use a different flour for these cookies?
    • Yes you definitely can. Changing the flour in the recipe may cause the cookie texture to be a bit different. Remember too that certain flours soak up more water. For example, when you cook with coconut flour, you typically need to add more liquid to the batter because coconut flour soaks up a lot of liquid and your batter can come out dry.
  • Can you use a different protein powder for these cookies?
    • You do not have to use the Arbonne Strawberry Protein powder. You can always use something you have on hand. I chose this protein powder because it adds a nice strawberry flavor to the cookies, but you can use a vanilla, maybe coconut, or an unflavored protein if you would like.
  • Can you use a different sugar for these cookies?
    • Yes, you can substitute the coconut sugar out for any sugar you prefer to use. Just remember that some sugars tend to be sweeter than others, so you may want to adjust the amount you put in!
