Ingredients for the Strawberry Shortcake Cookies
- Almond Flour
- Rolled Oats
- Baking Powder
- Organic Cane Sugar
- An Egg
- Vegan Butter
- Fresh Strawberries
How to make Strawberry Shortcake Cookies
- Preheat your oven to 350 degrees.
- Line a baking dish with parchment paper.
- Melt your butter in a microwave safe bowl.
- In a mixing bowl, combine all of your ingredients except the strawberries. Stir until the batter is mixed well.
- Fold in your chopped strawberries.
- Roll batter into balls and flatten the top just a bit.
- Bake for about 15 minutes.

Tips & Tricks
- You can turn these strawberry shortbread cookies into another flavored cookie with a different fruit. You can use blackberries, blueberries, really any fruit you want to!
- You do not have to use almond flour, but remember that using another flour may require more liquid because certain flours absorb more liquids.
- You can use a different type of sugar as well! I love using all different types of sugar, so I do encourage you to use whichever you prefer.

- 1 1/4 Cup Almond Flour
- 1/2 Cup Rolled Oats
- 1 tsp Baking Powder
- 1/2 Cup Organic Cane Sugar
- 1/4 Cup Vegan Butter I used Fora Foods
- 1/2 Cup Strawberries
Instructions
- Preheat your oven to 350 degrees.
- Line a baking dish with parchment paper.
- Melt your butter in a microwave safe bowl.
- In a mixing bowl, stir together all of your ingredients for the cookies. Mix well.
- Fold in your strawberries.
- Roll batter into cookie shapes and place on the parchment paper.
- Bake for about 15 minutes or until golden brown.
