Sweet and Salty Peanut Squares

For the Crust

  • 1/2 Cup Coconut Flour
  • 1/2 Cup Almond Flour
  • 1/4 Cup Coconut Sugar
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Water
  • 1 tsp Vanilla Extract

For the Peanut Butter Filling

  • 1/2 Cup Peanut Butter
  • 1/4 Cup Almond Flour
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Vanilla Extract
  • 2 Tbsps Almond Milk
  • 1 tsp Vanilla Extract
  • 2 Tbsps Almond Milk
  • A Pinch of Salt
  • 1/2 Cup Peanuts


  • For the crust, mix together all of the ingredients in a bowl until a dough like batter forms.
  • Press crust into an 8x8 baking pan lined with aluminum foil. To make the crust stay together, bake at 350 for 6 minutes, (this step is optional, but the crust does tend to stay together better).
  • In a mixing bowl, add all ingredients except for peanuts and salt. Mix well and pour over the crust.
  • Sprinkle with peanuts and sea salt to cover all of the peanut butter mixture.
  • Place in the freezer for about 2 hours to let it harden!
  • Cut and enjoy!
