Cinnamon Coffee Oatmeal Cookie Cake

For the Cake

  • 1 1/2 Cup Almond Flour
  • 1 Cup Rolled Oats
  • 1/2 Cup Organic Cane Sugar
  • 1/4 Cup Organic Brown Sugar
  • 1 1/2 tsps Baking Powder
  • 1 Egg
  • 1 Cup Oatsome Barista Blend You can use any oat milk or milk of choice
  • 1 tsp Cinnamon
  • 2 Tbsps Instant Coffee

For the Brown Sugar Topping

  • 1/3 Cup Almond Flour
  • 1/3 Cup Organic Brown Sugar
  • 1 tsp Cinnamon
  • 2 Tbsps Coconut Oil


  • Preheat your oven to 350 degrees and coat a 9x9 baking dish with coconut oil or spray.
  • Mix all of your ingredients together for the cake. Once it is mixed thoroughly, pour into your baking dish and set aside.
  • Mix together the brown sugar toppings until it becomes a crumble like texture. Crumble the topping on top of the cake.
  • Place in the oven and bake for about 35 minutes or until it is completely cooked in the middle.
  • Enjoy warm with a cup of coffee!
