Pumpkin Coconut Cookies

  • 1 Cup Almond Flour
  • 1 Cup Rolled Oats
  • 1 Cup Organic Cane Sugar
  • 1/2 Cup Pumpkin Puree
  • 1/4 Cup Avocado Oil
  • 1 Cup Coconut Flakes Unsweetened
  • 1 1/2 tsp Baking Powder
  • 2 tsps Pumpkin Pie Spice


  • Preheat your oven to 350 degrees.
  • Line a baking pan with parchment paper.
  • Mix all of your ingredients together in a mixing bowl.
  • Roll cookie dough into thick dough balls and place on the parchment paper. Flatten just a bit.
  • Bake for 15 minutes or until golden brown on the bottom.
