Pumpkin Maple Banana Pancake Muffins

  • 1 Cup Birch Benders Paleo Pancake Mix
  • 2 Bananas Ripe
  • 2 tsps Baking Powder
  • 1 Egg
  • 1/4 Cup Cane Sugar
  • 1/4 Cup Pumpkin Puree
  • 2 Tbsps Nutpods Pumpkin Spice Creamer You can use any milk if you do not have nutpods
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Maple Extract

For the Brown Sugar Coating

  • 1/4 Cup Brown Sugar
  • 1 Tbsp Vegan Butter Softened
  • 1 tsp Pumpkin Spice


  • Preheat your oven to 350 degrees.
  • Line a muffin tin with cupcake liners.
  • In a mixing bowl, combine all of the ingredients for the muffin mixture and stir until mixed thoroughly.
  • Pour batter into muffin pan.
  • In the mixing bowl, add together the brown sugar, butter and pumpkin pie spice. With your fingers, mix it and then crumble on top of the muffins.
  • Bake at 350 for about 15 minutes or until cooked all the way through.
