Pumpkin Maple Banana Pancake Muffins

Servings: 12 Muffins
- 1 Cup Birch Benders Paleo Pancake Mix
- 2 Bananas Ripe
- 2 tsps Baking Powder
- 1 Egg
- 1/4 Cup Cane Sugar
- 1/4 Cup Pumpkin Puree
- 2 Tbsps Nutpods Pumpkin Spice Creamer You can use any milk if you do not have nutpods
- 1 tsp Pumpkin Pie Spice
- 1 tsp Maple Extract
For the Brown Sugar Coating
- 1/4 Cup Brown Sugar
- 1 Tbsp Vegan Butter Softened
- 1 tsp Pumpkin Spice
Preheat your oven to 350 degrees.
Line a muffin tin with cupcake liners.
In a mixing bowl, combine all of the ingredients for the muffin mixture and stir until mixed thoroughly.
Pour batter into muffin pan.
In the mixing bowl, add together the brown sugar, butter and pumpkin pie spice. With your fingers, mix it and then crumble on top of the muffins.
Bake at 350 for about 15 minutes or until cooked all the way through.
