Pumpkin Spice Coco Chow

  • 3 Cup Cereal I used Barbara's Rice Puffins
  • 1/2 Cup Walnuts
  • 1/2 Cup Shredded Coconut
  • 1/4 Cup Pumpkin Puree
  • 2 Tbsps Coconut Oil
  • 1/2 Cup Miss Jones Vanilla Frosting
  • 1 tsp Vanilla Extract
  • 1 tsp Pumpkin Pie Spice
  • Powdered Sugar


  • On a baking pan, place parchment paper on the pan and set aside.
  • In a large mixing bowl, add in your cereal, walnuts and coconut. Set aside.
  • In a microwave safe bowl, add your pumpkin puree, coconut oil and frosting. Microwave for 30 seconds to a minute and stir until it is mixed together. Fold in the vanilla extract and pumpkin pie spice.
  • Pour over the cereal, walnuts and coconut. With a spatula, mix together gently so the cereal does not crush.
  • Pour cereal in a gallon size bag and sprinkle with powdered sugar.
  • Shake until the powdered sugar coats all of the cereal.
  • Pour the mixture over the baking pan. Let it dry and harden.
